Local watering hole Pangaea Two Brews Cafe recently expanded its operations to include a bottle shop with about 200 beer selections. The bottle shop opened earlier this month, and owner Rob Archie said he has plans to add a delivery service in the Curtis Park neighborhood in September.

“We had our grand opening Aug. 6, and it was full in here all day,” Archie said. “The response has been really positive.”

Pangaea, located at 2743 Franklin Blvd., is marked by its selection of Belgian beers on tap, and Archie told The Sacramento Press in a previous article that he has long wanted to bring a bottle shop to offer those beers at to-go prices.

Beers are stored in a refrigerator spanning much of one wall of the bottle shop, which can be entered by the street or through an arched doorway from the adjacent cafe.

Another new feature that came with the bottle shop was a wine and cheese selection.

“We have some people who come in here, and as much as they might love beer, they sometimes want a glass of wine,” Archie said.

Wine selection includes chilled whites as well as reds in a rack along one wall, and he said the bottle selection is varied, with wines from the United States, France, Chile and other areas.

Coming sometime next month is a bicycle delivery service for the Curtis Park neighborhood.

“It’s a convenience for the area,” Archie said. “We will keep our website updated with what we have in stock, and people can order and have it delivered to them.”

To make it worthwhile, Archie said he will either have a minimum purchase requirement or a small charge for deliveries. For more information as it becomes available, check the website or Facebook page.

While bottles are priced for take out, patrons dining in the adjacent cafe can have bottles at their tables for a small corkage fee, depending on the size of the bottle.

“What’s cool about our system is (customers) don’t have to go over and buy it there and then come back to their table,” Archie said. “It’s all the same business, and it’s all connected, so they can just have it brought to their table and added onto the bill.”

Dave Morrow, craft beer manager for DBI Beverage, Inc., of Sacramento, a beer distributor, said the opening of the bottle shop is indicative of a growing trend in craft beers taking hold in Sacramento over the past couple of years.

“It’s really blown up,” he said, adding that the beer scene has become more sophisticated, and beer drinkers are increasingly treating the beverage with the respect and reverence often associated with wines.

Morrow said that even though there may be some expensive beers, the high-priced ones coming in bottles that hold about two pints are still much more affordable than their counterparts in the wine industry.

“You can come in here and literally have your pick of the best beers in the world,” Morrow said Tuesday as he perused the bottles in the shop. “And what’s great is anybody can afford it. You can get some of the best beers in the world for $10-$15 here.”

Archie said he has long wanted to have a bottle shop, and Morrow said he “nailed it.”

“If I won the lottery, this is exactly the bar I would build in my house,” Morrow said.

Marni Rubin took her guests on a journey through the tastes, textures and pairings of specialty cheeses, chocolates, ports and dessert wines Saturday. C’est le Cheese owner Jody Lagorio and her husband, Dan Hague, hosted the event at the Lofts on L street.

Rubin is a wine educator by trade, teaching class through Wine One One, but she said this class is her favorite to teach, especially around the holidays. She is self educated and she is also a certified wine specialist by the Society of Wine Educators. <strike>Before teaching she worked as sommelier.</strike>

“I enjoy bringing people together to enjoy and share food and elevate their knowledge of all aspects of food,” Lagorio said.

The guests are greeted when they arrive and brought to the third floor for a reception before the class starts. He said that an Italian cheese is always paired with an Italian wine, and a Spanish cheese with Spanish wine.

“We started at the lofts at the Marriott, but we couldn't get as many people in,” Hague said.

He said the Marriott had room for only19 participants, and now at the Lofts they are able to seat 27. C’est le Cheese has been hosting classes at the Lofts for about a year now.

The class served five wines with chocolate and cheese to accompany each one. Rubin said there are five S’s in wine tasting: see, sniff, sip, spit/swallow, and savor. Rubin talked about the production of wine, cheese and chocolate. She said she hopes this class will help the guest appreciate their wines a little bit more.

C’est le Cheese is located at 1818 L street. The next class, Easy Entertaining, is on November 17th. Roxanne O’brien will give tips on cheese presentations and appetizer recipes. Prices for classes range from $50 to $55. Registration can be done online at cestlecheese.com.

The building at 3527 Broadway has been vacant for years, but is now home to a new business as of Aug. 1 – BFD.

Brew, Ferment, Distill owner Tim Clark said he wants to make his store a one-stop shop for Sacramentans who like to do their own beer brewing, winemaking, cheesemaking and any number of other do-it-yourself foods and drinks.

“This right here is entirely for the urban hippie,” Clark said. “It’s for the slow-food movement.”

Clark spent 13 years as a mortgage banker before “being unemployed at the right time” and deciding to start BFD.

“My wife is still warming up to the name,” he said with a laugh.

Doors opened Aug. 1, and Clark said he immediately sent e-mails to local brewers and vintners.

“People have been extremely gracious,” he said.

While beer- and winemaking products factor heavily into the store’s inventory, there are options for those who want to share the experience with the under-21 crowd, and no alcohol is actually sold.

“We wanted to make this business family-friendly,” Clark said as his two young children watched TV on a couch in the kids’ corner. “We have everything you need to make sodas, root beer, cheeses, even balsamic vinegar if you have the patience for it.”

Products for distillation are sold as well, though Clark was quick to point out that distilling spirits such as whiskey is illegal.

“It’s illegal to distill alcohol, but you use the products to distill water and essential oils from herbs,” he said.

Chris Pendarves owns the building and several others in the area, and he said it was vacant since before he purchased it in 2005.

“I think it’s a great, risky idea, and perfect for urban retail use,” he said. “People actually create stuff – it’s not all store-bought. It’s not a liquor store. It’s a different kind of retail.”

Josh Gibson, a friend of Clark’s who crafts his own beer, said he thinks the store gives people the opportunity to “put their hands on what they’re making, drinking and eating.”

In making their own food and beverages, he said, people get a better appreciation for the process and where they come from than purchasing them from the supermarket.

“Not only that, it’s absolutely fun,” he added.

Home-brewing beer is easy, according to Gibson and Clark.

“If you can make tea, you can make beer,” Clark said, adding that he buys as much of his products – such as hops and grains – as possible from local sources.

Basic beer-brewing starter kits are offered for sale at the store, and Clark said home brews can be done with as few as three hours of work or – pointing to Gibson – “you can make it as complicated as you want.”

Gibson said he enjoys crafting beers of all different styles and catering them to his personal tastes.

Clark said a good six-pack can be brewed for $5-$6 at home.

“It’s a cost-effective way to have your cake and eat it, too,” he said.

Brew, Ferment, Distill is open from 10 a.m. - 7 p.m. Mondays, noon-7 p.m. Wednesdays-Fridays and 10 a.m. - 7 p.m. on weekends. The store is closed Tuesdays.

What better backdrop for enjoying a selection of exquisite French cheeses than Bastille Day? This past Wednesday a group of about thirty received an education in the history of French cheesemaking from 'C'est le Cheese' and were able to sample some of that country's best cheese offerings.

All classes are held at The L Street Lofts, and the evening began in a great space on the third floor, which featured large glass windows looking out over L Street. The 'students' were able to get to know one another while enjoying a bubbly beverage that tied into the theme of the class. Being poured at this 'French Lesson' was a French sparkling white wine from Limoux, which is located in southern France. A 'Blanc de Blancs' is a great way to start off any event, and here it served not only to set a festive yet relaxed mood, but also to open the palate before getting down to business.

The group continued upstairs to the penthouse suite on the eighth floor, where plates of cheeses and glasses of wine were waiting behind personalized place cards on white linen covered tables. Jody Lagorio, founder of C'est le Cheese, welcomed the class and introduced the instructor/cheese expert, Judy Creighton. A core instructor at The Cheese School of San Francisco, she is a cheese educator and former owner of cheese and wine shops in San Francisco for 25 years, as well as a consultant for retailers, distributors and importers.

Judy was very knowledgeable and passionate, and delivered an extremely detailed history of French cheeses and cheesemaking. She guided the class through savoring the different aromas and flavors of the featured cheeses, and explained the meanings of the different regions, textures, flavors, milk types and shapes. Students were given a map of France detailing the different cheese regions, as well as a handout for taking tasting notes and commenting on the different characteristics, such as a cheese's texture, intensity, acidity, saltiness, flavor and finish. The cheeses featured included Saint-Nectaire, Fromager d'Affinois, Brillat-Savarin, Selles-sur-Cher, Comté, P'tit Basque, Munster D'Alsace, Saint Agur. If you didn't know a thing about any of these coming in, you certainly did by the end of the class.

Enhancing the experience and accompanying the cheeses were Fresh Figs, Marcona Almonds, Gracious Gourmet Sour Cherry Spread and Four Onion Basalmic Spread, Lavender Honey, Grateful Bread French Baguettes and Wheat Walnut Baguettes. The wine pairings included a red Delas Saint-Esprit Cotes-du-Rhone, 2008, and a crisp white Christian Salmon Cuvee Vieilles Vignes Sancerre, 2008. The cheeses were also available for purchase after class.

Whether you're scared to death to approach a cheese counter, or you're a maître fromager, C'est le Cheese aims to enhance your enjoyment of cheese. Attending one of their classes is a fun and educational way to spend a coupe of hours. "I think Sacramento is an up and coming cheese region," says Judy.

The next C'est le Cheese class is 'Summer Cocktails and Cheese' and is currently sold out (please visit the C'est le Cheese site to be placed on a cancellation list). The following class is 'Fresh Cheesemaking' on September 1st and spaces are available. For more information and to register please visit C'est le Cheese.

Loosen your belts. Sacramento's most famous burger place, The Squeeze Inn, held its grand reopening celebration Thursday morning.

The celebration featured guest appearances by Mayor Kevin Johnson, City Councilman Kevin McCarty and County Supervisor Don Nottoli as well as music, speeches, a raffle and a burger-eating contest. Several hundred people shuffled into The Squeeze Inn throughout the lunch hour for special prices on the burger known for its famous "cheese skirt," which extends an inch beyond the bun.

The burger is constructed by cooking a one-third-pound beef patty and putting "a giant handful of cheese" on top of, and around, the burger, said Squeeze Inn employee Keith Lenhart. Then an ice cube is placed on the grill while the cheesy patties are topped with a lid, creating a steam chamber for the cheese to melt quickly.

"We go through about 200 to 300 pounds of cheese per day," said employee Charles Rogers.

"And about 270 pounds of potatoes," added Lenhart.

Lenhart, who said he has been eating at the Squeeze Inn for 15 years, only recently started working there a few months ago. Now, he and Rogers are in the process of opening a new Squeeze Inn on the corner of Sunrise Avenue and Douglas Boulevard in Roseville next month.

With locations in Sacramento, Galt and Napa, a Roseville location would be the fourth for the Squeeze Inn, which originally opened in Sacramento 34 years ago.

"This is the perfect location," Lenhart said of the burger joint's new digs on Power Inn Road in Sacramento. "I love it. It helps serve the people better, and (soon) we will get this great product out there in Roseville."

After being featured on Food Network's "Diners, Drive-ins and Dives," hosted by Guy Fieri, the restaurant gained national fame. It was later mentioned on "Good Morning America" and "The Tonight Show with Jay Leno."

It also gained notoriety for not being in compliance with the Americans with Disabilities Act. After several lawsuits, the Squeeze Inn moved to its new location.

"We (would have) had to make changes to the restaurant that would destroy the character, so we decided to move to another location," said owner Travis Hausauer. "The great people of Sacramento gave us wonderful support, and it was amazing what everybody did for us. We're really happy with the location, and we hope to have another 34 years here."

Now larger and wheelchair-accessible, the new location still retains the feel of the old restaurant. It incorporates the entire front entrance, all the bar stools and many of the decorations from the old location.

Michael Whipple, a Certified Access specialist for ADA Resource Associates and wheelchair user, said the old Squeeze Inn location had some wheelchair accessible seating. Although he doesn't eat burgers for health reasons, he helped plan the new location to make sure everything from the entrance to tables to the bathroom, were completely accessible.

He presented Hausauer with a plaque to put in the window. It certified that the restaurant is now fully accessible.
