From French bubbly to tequila cocktails, local bars and restaurants are creating a range of options for a New Year’s Eve toast.

Lounge on 20 will serve a cocktail called “By the Fire,” which was created by bartender Steven Oberlander. The drink will give customers the feeling of “eating pie on the holidays,” said Garrett Hintze, Lounge on 20 bar manager and buyer.

The $12 cocktail features Nocino walnut liqueur together with a small amount of pear liqueur. Oro de Oaxaca mezcal will be added to the drink.

The cocktail will have a Buffalo Trace bourbon base, giving it a “crème brûlée honey tone,” Hintze said. He described the drink as “very balanced,” noting that it’s not overly sweet.

If the cocktail is popular Thursday night, then Lounge on 20 may add it to its January and February menu, Hintze said.

At Zócalo restaurant, partygoers can ring in the new year with tequila. Beverage manager Joe Anthony Savala said the restaurant will offer a $7 tequila cocktail called "Mi Corazón" (My Heart). The cocktail includes Corazón tequila, fresh-squeezed lime juice, agave nectar and pomegranate juice, he said. It will also have a ginger syrup and a Cava champagne float, Savala said.

Meanwhile, Perrier-Jouët champagne will be the toast of Shady Lady Saloon’s New Year’s Eve drink menu. The bar’s $80 service includes a bottle of Perrier-Jouët and an appetizer spread of caviar and foie gras. Co-owner Jason Boggs explained the choice to serve caviar and foie gras: “We wanted to get the sexiest foods that we could,” he said.

Charles Heidsieck's award-winning champagne will be available at L Wine Lounge. Heidsieck Brut Reserve will be served; a glass will cost $16. Co-owner Marcus Marquez said the Brut Reserve “has something for every type of champagne drinker” because it’s creamy and nutty without being too dry or too sweet.

L Wine Lounge will also host a New Year’s champagne toast at 3 p.m. because it will be midnight in Paris at that time, Marquez said.

O'Mally's Irish Pub is creating a drink for Thursday night called "Midnight Bull." The $6 drink consists of black cherry vodka, grenadine, Red Bull, pineapple juice and Blue Curacao, said bartender Kevin Hartung.
